Can anyone tell me how safe is it to leave a car @ Olof Park near the Jerez airport. i.e. Will my car still be intact when I return a week later?

Many passengers use the Olof Parking, so it should be OK and I haven't heard of any problems. Parking at Jerez airport costs around 48 Euros for a week, checkout : http://www.aena.es/en/jerez-airport/index.html

If you are concerned about your car, 48 Euros isn't much for peace of mind.
